Chicken Parmesan Pizza

Devin’s delicious whole wheat crust pizza will satisfy even the biggest pizza cravings, but won’t set you back too many calories. With a tasty sprinkling of Parmesan cheese on top of a protein packed chicken and mozzarella topping, Devin’s Chicken Pizza recipe is sure to become your favorite!

This recipe makes 8 servings.

Ingredients:
Olive oil spray
4 large (about .6 ounce) garlic cloves
1 ounce (about 16 large) fresh basil leaves
8 small (about 2 pounds), plum or Roma tomatoes sliced into quarters and seeded
540 gram whole wheat pizza crust
1/2 teaspoon dried oregano leaves
1/2 teaspoon crushed red pepper flakes
6 ounces finely shredded mozzarella cheese
3 tablespoons grated parmesan cheese
1 pound lean grilled chicken breast, cut into ½-inch cubes

Directions:
Preheat the oven to 475 degrees. Lightly mist a 16” pizza pan with olive oil spray.
Place the garlic and basil leaves in the bowl of a food processor fitted with a chopping blade.
Pulse until lightly chopped.
Add the seeded tomatoes and pulse until the mixture is roughly chopped and well combined. Remove the mixture to a fine mesh strainer and drain it.
Place the pizza crust on the prepared pan. Spread the tomato mixture evenly over the dough and top with the oregano and the red pepper flakes.
Sprinkle half of the mozzarella over the tomato mixture. Top it evenly with the chicken, then the remaining mozzarella and the parmesan.
Bake for 12 – 14 minutes until crust is crisped and the toppings are hot through.
Allow to cool slightly. Slice into 8 equal slices and serve immediately.
