Ginger & Allspice Glazed Sweet Potatoes
So rich in beta-carotene, low in calories and brimming with anti-oxidants and potassium, sweet potatoes (or yams as they are often called) should be a staple in health conscious and Allergy Friendly diet.
This recipe works well with the darker-skinned sweet potato varieties which have thicker, dark orange to reddish skin with a vivid orange, sweet flesh and a moist texture – for example Georgia Red, Centennial, Covington, Ruby and Beauregard.

This recipe makes 6 servings
Glazed Sweet Potatoes with Ginger and Allspice Ingredients:
2 lb Sweet Potatoes
¼ cup butter
3 tablespoons oil
2 crushed garlic cloves
2 pieces of stem ginger, finely chopped
2 tablespoons ground allspice
1 tablespoon syrup from ginger jar
2 tablespoons fresh thyme, plus a few sprigs to garnish
salt and cayenne pepper
Directions:
Peel the sweet potatoes and cut them into ½ inch cubes.
Melt the butter with the oil in a frying pan.
Add the cubes and fry, stirring frequently, for about 10 minutes until just soft.
Stir in the garlic, ginger and allspice.
Cook, stirring, for 5 minutes more.
Stir in the ginger, syrup, salt, a generous pinch of cayenne pepper and fresh thyme.
Stir for 1 – 2 minutes more, then serve, scattered with thyme sprigs.
