Hearty Turkey Chili Soup

From Food to Some Poison to Others, The Food Allergy Detection Program, by Terry Traub R.D.H., B.S. You could substitute left over turkey; just sauté for a minute in the pan instead of browning. 

This recipe makes 6 servings and takes about 15 minutes preparation time and 45 minutes cooking time.

Hearty Turkey Chili Soup Ingredients:
¾ pound ground turkey
2 tablespoons canola oil ( I would substitute olive oil)
½ cup chopped onion
¼ cup chopped celery
1 carrot, peeled and grated
2 tablespoons rice flour
1 (15 oz) can red kidney beans, drained and rinsed
1 (16 oz) container fresh salsa
1 (15 oz) can tomato puree 
1 cup beef broth
3 cups water
½ teaspoon salt
¼ teaspoon pepper
½ teaspoon chili powder
½ teaspoon ground cumin

Instructions:
In a medium skillet brown the turkey and set aside.
In a large saucepan add oil and heat.
Add onions, celery, carrots and sauté until tender.
Add flour and mix with vegetables.
Slowly add beef broth so no lumps in broth are produced.
Add water, cooked turkey, tomato puree, kidney beans, salsa, spices, salt and pepper. 
Bring soup to a boil, reduce heat and simmer for 45 minutes.
