A combination of a donut and a fried croissant - yum!

A combination of a donut and a fried croissant, these are sweet confections to make any day a holiday.

This recipe makes 4 servings and easily doubles or triples.

Nigerian Sweet Puffs Ingredients:
2 ounces butter
4 ounces caster sugar
1 egg
Diluted milk made with 1 ounce each of milk and water
½ teaspoon freshly grated nutmeg
Vanilla or coconut essence
Salt to taste
1 teaspoon baking powder
2 ounces plain flour
Canola oil for deep frying
Coffee syrup, honey or sugar, optional for garnish

Directions:
In a medium size bowl, cream together the butter and sugar, then blend in the egg.
Add the diluted milk, and vanilla or coconut flavoring essence. Set aside.

In a second bowl, sift together the flour, baking powder and salt, then add the wet mixture to form a firm dough.
Flour a board and roll out the dough so that it is evenly thick, about ¼ inch and cut two-inch diamond shapes with a cookie cutter or knife.
Cut a slit in the middle of each diamond. Pull one diagonal end through the center cut and twist the diamond slightly.

Heat the oil in a cast iron or heavy skillet and fry the pieces until brown and cooked through.
Drain off the excess oil on kraft paper or paper towels.
Serve hot with a drizzle of coffee syrup, honey or dusting of sugar, as desired.
