Satisfying Coffee Spiced Satays

With the growth of Thai restaurants dotting many cities these days, the pleasure of sweet 'n spicy that makes up many Thai dishes is readily available for the home chef. One of the most delightful Thai dishes, as an appetizer or entrée, is the satay, skewers of poultry or beef with a sweet/sharp sauce made from chiles and peanut butter. 
Naturally, we added a little coffee to our recipe, and we think you'll love it. Buy bamboo or thin wooden skewers in your grocery story, and wet them first before putting on the meat to avoid burning them while cooking. 
You can easily substitute safflower or sunflower oils for peanut oil, but the peanut oil does add flavor. Instead of the chicken tenders, you can use boneless, skinless chicken breasts, and cut them up yourself into ½ inch wide long pieces. Total weight should be 2 pounds. 
This recipe is suitable for tofu, beef, pork or lamb, or veggies alone.

This recipe makes 24 satays or 6 generous servings.

Satisfying Coffee Spiced Satays Ingredients:
1 tablespoon minced fresh ginger root
2 cloves garlic, minced
2 tablespoon ground coffee, Colombian, Sumatra or similar
2 tablespoons peanut oil
¼ cup low-sodium soy sauce
2 tablespoons chunky peanut butter, freshly ground if possible
1 tablespoon light brown sugar
2 tablespoons lime juice
3 cloves
1 tablespoon curry powder
1 teaspoon crushed red chilies
2 pounds chicken tenders
24 wooden skewers

Directions:
Peel and mince fresh ginger root. Mince garlic. 
In a large bowl, combine the ginger root and garlic with all the other ingredients thoroughly, except the chicken, and set aside while you thread the chicken pieces onto the skewers. When done, place the skewers in a deep glass dish then pour the marinade over the skewered chicken. 
Cover tightly and let them marinate in the refrigerator overnight, or at least several hours before grilling.
To cook, heat coals or gas to medium heat on your grill. Remove the skewers from the dish and place on the grill all at once. Cook about 5 minutes on each side, or until cooked through. Use remaining marinade to brush onto the skewers, as necessary.
Serve with fresh salad of thinly sliced oranges, red onion, and spinach; aromatic jasmine rice, and Thai or regular iced coffee.
