Seafood Romanesco Style

From The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr – this recipe works well with cod, halibut or salmon.

The recipe makes 4 servings.

Ingredients:
1 pound fish, cut into 4 ounce portions
1 large bell pepper, diced
½ large yellow bell pepper, diced
1 large onion, diced
8 cloves garlic, cut into large pieces
1/3 cup low sodium vegetable stock
½ teaspoon low sodium soy sauce
¼ teaspoon ground black peppercorns
1/3 cup white wine
½ bunch Italian parsley, leaves picked, washed and chopped

Instructions:
In a large nonstick skillet, sauté the fish over medium heat.
When browned, add the peppers, onions and garlic.
When the onions are translucent, add the stock, soy sauce, black pepper and wine.
Continue cooking.
After the liquid has been reduced by half, turn the heat to low and cook fish in sauce another 3 minutes.
Garnish with parsley.
Serve hot.
