Seared Whitefish with Rum and Thyme
This decadent sounding recipe from The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr contains only 253 calories per serving, but a taste that is sure to make your taste buds tingle. Garnish with lemon wedges and serve with steamed vegetables for a meal that will keep you on your diet, but feel like a treat!
This recipe makes 4 servings.
Ingredients:
1 onion, peeled and diced
1 teaspoon cumin
1 teaspoon coriander
½ teaspoon black peppercorns, ground
2 teaspoons chopped fresh thyme leaves
1 cup orange juice
¼ cup lime juice
¼ cup dark rum
1 tablespoon cornstarch
2 tablespoons water
Four 4 ounce whitefish fillets
1 tablespoon chopped fresh cilantro leaves
Instructions:
Preheat oven to 450 degrees.
In a small stockpot, cook the onions over low heat until translucent, about 3 minutes.
Add half portions of each of the spices and all of the orange juice, lime juice and rum.
Simmer the sauce for 10 minutes.
Thicken with cornstarch and water.
Season the fish with the other half of the spices.
In a very hot skillet, sear fish on one side for about 3 minutes.
Put fish in oven in a baking dish to finish cooking, about 6 minutes.
Add the cilantro to the sauce.
Spoon sauce over fish.
