Recipe for Grocerants: Spicy Ginger & Orange Glazed Chicken Wings

Wings are one of the top foods people choose to go with the Super Bowl! Here's a modern and creative twist on this popular dish that supermarkets and their grocerants can share with their shoppers. From SupermarketGuru contributor, Chef Jamie, here is a super simple and healthier baked instead of fried recipe.
This recipe makes 6 servings

4 pounds chicken wings
1 cup orange juice concentrate
1/3 cup freshly squeezed lemon juice
1/2 cup Hoisin sauce
1/4 cup granulated sugar
3 tablespoons olive oil
4 tablespoons freshly grated ginger
6 garlic cloves, minced
1 to 2 teaspoons red pepper flakes (or more to taste)
6 scallions, thinly sliced
In a large plastic, resealable bag or a large container with a lid, combine the orange juice concentrate, lemon juice, Hoisin sauce, sugar, olive oil, ginger, garlic and red pepper flakes.
Seal and shake to mix well. Add the chicken wings and toss to coat.
Refrigerate the wings for at least 24 hours, or up to 2 days.

Preheat the oven to 400°F.
Line a large cookie sheet with aluminum foil.
Drain the wings from the marinade and spread the wings on the foil.
Bake for 35 to 45 minutes, or until cooked through and caramelized.

To serve the marinade as a sauce, place the marinade in a small saucepot, bring to a boil and simmer for 10 minutes to reduce the sauce and compound the flavors and to make the marinade safe to eat.

Transfer the wings to a serving platter and garnish with the scallions.
