Simple Oven Stew

From The $7 a Meal Cookbook by Linda Larson this meal can cook in the oven while you get on with things you need to do around the house, or help the kids with their homework. Serve with a salad and crusty bread for a hearty supper.

This recipe makes 6 servings at a total cost of $6.97!

Ingredients:
1 pound ground beef
1 tablespoon olive oil
2 onions, chopped
4 carrots, sliced
3 cloves garlic, minced
1 (10.75 ounce) can cream of mushroom soup
2 cups water
3 russet potatoes, sliced
2 cups frozen peas
½ teaspoon dried tarragon leaves
½ teaspoon salt
1/8 teaspoon pepper

Instructions:
Brown ground beef in large skillet. Remove meat from skillet with slotted spoon and place in 3 quart baking dish. 
Drain all but 1 tablespoon of drippings from skillet. 
Add olive oil then cook onions and carrots in drippings for 3-4 minutes until glazed.
Add to beef in baking dish.
Add garlic, soup and water to skillet and bring to a simmer, scraping any brown bits from the bottom of the skillet.
Then pour into baking dish along with any remaining ingredients and stir well.
Cover tightly with foil and bake at 325 degrees for 1/12 to 2 hours until vegetables are tender and soup is bubbling.
