Our first Finalist Spotlight video is with Heather Banter from Circle City Spuds.

Next week in Las Vegas, over 2,000 potato farmers, processors and brands will meet up at the Potato Expo where three potato food truck chefs will be competing for the title of Top Spud.

Each has a unique story and fabulous recipe that goes well beyond the potato dishes that Betty Crocker or Martha Stewart taught us to make.

Our first Finalist Spotlight video is with Heather Banter from Circle City Spuds.

HEATHER BANTER

"My food Truck is Circle City Spuds & Grub and we're located in Indianapolis Indiana.  

At the Spud Nation Throwdown, we will be competing with the Naptown Mac & BBQ Spud.   I would categorize it as a signature, a favorite, and the top rated spud from our truck.  IT’s what people demand when they come to my food truck.  It’s actually a baked potato with homemade mac & cheese, homemade pork BBQ and bacon.

In the back of my head as a child I had always seen crazy baked potato ideas, so I just did what I knew as a child and just stacked mac & cheese on top of a potato.  And then my boyfriend demanded meat, so I came up with pork BBQ and bacon.  Considering I’m not a chef.  I’m not trained in anyway to be a cook, I”m just excited to compete with one of my recipes.  It’s something that made us popular in Indianapolis that we get to show off in Vegas."
